Day 15 – 2 weeks on track

I can’t believe it’s already been 2 weeks since I started this diet. Everything is going well, I would like a little cake with frosting but gonna put that off till December. I made good choices today. Super proud of what I did at lunch. Instead of getting tuna salad sandwich that had loads of fat and calories, I got a veggie wrap with tiny bit of ranch dressing and 1 slice of American cheese.

What I ate today:

Breakfast: Protein Oatmeal Cranberry Almond, Raisin, Date & Walnut oatmeal (380 cal)

Lunch: Huberts Blackberry Lemonade (120 cal), Veggie cheese wrap (400 cal)

Dinner: Vegetable Lasagna (370 cal), Cranberry Apple vodka (140 cal), Cranberry pineapple juice (110 cal)

Snack: dum dum lollipop (20 cal), lean cuisine spinach and artichoke ravioli (280 cal)

Total calories today: 1820


Day 6- Everything is groovy

I weighed myself today because I was curious, I’m not going to say what my weight is until Sunday, but I have lost some more lbs. It’s working. Cutting calories and not eating donuts and pizza is working. What a shocker!

Last night I had another food crises where I wanted to overeat more of those Little Bites muffins but stopped myself. Again. I just want my calories to stay under 2000 each day for 3 months. If I can manage that, my day was a success.

Cravings. This morning I got up a lil earlier to take my mom to the airport shuttle and I wanted to stop for pancakes soo bad. But 3 pancakes at Ihop have over 1000 calories in them with the syrup and strawberries, so I just didn’t do it. Then when I was at school, I really wanted a starbucks caramel frappucino that they sell on campus, especially since I was tired. I thought I needed a pick me up so I wanted the sweet coffee drink. I talked myself out of it by saying “the coffee will probably take more than a hour to kick in and by that time my class will be over, so whats the point”

What I ate today:

Breakfast – Amy’s Tofu Scramble (340 cal)

Lunch –  #Avocado, sprouts, tomato, onions and cheese sandwich (440 cal), sweet tea (190 cal)

Dinner – Uncle Ben’s Ready Rice – red beans and rice (420 cal)

Snack – 1/2 cup bananas foster non dairy frozen dessert (172 cal), Little Bites chocolate chip muffins (190 cal), 4 melatonin gummies

Total calories so far today – 1782

Bananas Foster

Today I picked up some groceries from Wal-Mart and they had this new flavor of vegan ice-cream:

It’s SoDelicious chocolate drizzled Bananas Foster dairy free frozen dessert. The website describes it as a banana-vanilla-chocolate chip sensation inspired by the classic. This is a new flavor for the season.

I couldn’t wait to try it, the first lick tasted a little odd. I asked my roommate to taste it and tell me what she thought, she says it taste like banana flavored coffee. It’s made from cashew milk and vegan ice-cream can take a minute to get accustomed to. You can definitely taste the banana in this ice-cream and I love the little pieces of chocolate. It has a great texture.

The second and third lick was much much better. I only ate 2 spoons of it so far but I’m pretty happy with it. It’s not too bad calories wise. 180 calories per half cup.

I want to try some other flavors of dairy-free ice cream but most of them are made with cocunutmilk and taste like coconut and I don’t like that. My favorite soDelicious flavor is still the salted caramel dipped chocolate bars. I get them atleast once a week.

I paid $4.47 at WAl-Mart for this Bananas Foster vegan ice cream which is a good price, I heard it’s going for $5.99 at Whole Foods.

What I ate

What I ate today as someone new to the Vegetarian eating plan.

Breakfast: Almond dairy-free peach yogurt, 1 banana, oatmeal – 700 calories

Lunch: Couscous curried with almonds and cranberries, broccoli and cheese Steamers, Simply Nature Mango Fruit bar – 320 calories

Dinner: Seasonal mixed fruit, Amy’s Mattar Paneer, fudgecicle – 510 calories

Snacks: Veggie Snack Tray (tomatoes, snap peas, carrots), roasted garlic hummus, Roasted Garlic and Herb Baked Pita Chips, dried fruit – 925 calories

Notes: that yogurt alternative was not very good, it didn’t taste anything like greek yogurt which is what I am accustomed to eating, I have 3 more cups of that stuff, I hope the other flavors are better.

Transitioning to Vegetarian

OK I finalized my weekly shopping by picking up my groceries from Wal-Mart today.

Wanted to post this in case anyone else is similar to me and don’t want to cook or meal prep, but would like to transition to vegetarian on a budget.

I ordered from WalMart online groceries and use their pickup service, my total came to $97 for about 9 days of food. I don’t search for the cheapest, I just search for what fits in my budget of $70-100 per week for 1 person. The only thing I bought that requires cooking on a stove is the couscous, it cooks within 5 minutes. I don’t think I would re-purchase it.

Someone on the Vegetarian Facebook group said Parmesan is not vegetarian, it’s made with animal rennets. I looked it up and Amy’s meals even with parmesan do not have animal rennets. This article states “many brands in the U.S. use vegetable rennet in place of animals’ stomach linings”

One thing I would do differently is maybe order less items with cheese and butter, even though most say “lightly sauced”, also I’m unfamiliar with the size of things when ordering online and the hummus I ordered is so small, I’ll probably eat it all in 1-2 days.

I ordered some black eyed peas and the ingredients online do not show that it has meat in it but I just looked at the ingredients and it has pork broth in it. I can’t eat that crap. It cost less than $1 so not even sure it’s worth taking it back. I left it in the trunk of my car.

Also, I have about 5 days worth of hot pockets,with meat in them, still in my freezer. I need to eat them all, I won’t waste them and they are taking up too much room in the freezer. So if you follow me on MyFitnessPal, that is why I am still eating those.

Day 1- Vegetarian Groceries

I ordered my main vegetables and fruit and groceries online at Wal-Mart today, cost $97.00. I can’t pick it up till tomorrow.

Today I did venture out to some of the other places people on the Vegan and Vegetarian Facebook groups suggested.

At Aldi’s I got 3 boxes of non dairy real fruit bars , fruit and nut trail mix, fig bars, sweet and salty nut granola bars. Total : $18


At Target I got these Artichoke and Parmesan Swirls, which I had for lunch today, they cost $4.49 and were very good but also very high calorie (600 for the box): DZ4uojUU8AEcNQ1.jpg-large

At Target I also bought – Smoked Gouda Mac N Cheese, Butternut squash and Sage ravioli,  a couple of meatless burritos (they have seitan in them), thai green curry, total $21


At Dollar Tree I picked up 2 packs of almond cookies, a frozen lemonade cup and a cinnamon roll with icing in the fridge section – total $4

Total $43 for a lot of snacks and some food. Plus the $97 I spent at walmart comes out to $140, that’s double my allotted weekly grocery budget so hopefully this stuff lasts almost 2 weeks.
